Avocado joy
Last week I re-discovered an old guilty pleasure and it was good, oh so good…
It was the kind of joy you get from chocolate, only better, because it comes from indulging in something that’s actually good for you. I’m talking about 2 halves of an avocado, each with a little pool of Kraft Honey Mustard light salad dressing where the pip used to be, and me, with a spoon. Yum!
And they’re not just a guilty pleasure – avocados provide healthy fats, which actually raise your serotonin levels and keep you happy. They’re also rich in vitamin B6, vitamin E, folic acid and fibre.
In the UK, the avocado season runs from April through to September, so now is the perfect the perfect time to introduce them into your diet. They work equally well in simple snacks or as a meal ingredient (a half counts as 1 of your 5 a day!). Try these fantastic suggestions;
Smoked salmon and avocado terrines
A light starter that’s fantastic on dinner party menu.
Warm avocado salad with spicy chorizo
A quick, simple main that’s ready in 20 minutes.
Avocado and lime cream dip
One word – delicious! Just add corn chips.
Spicy bean and avocado tostadas
A simple vegetarian Mexican recipe, that’s great fun to make with the kids.
Well, I certainly don’t need any more inspiration… I just need the willpower to get them out of their skins and into a meal without eating them first!
Enjoy!
